toomuchfood tuesday.

I had a whole chicken that was sitting in the fridge since the weekend.

I had planned to roast it then, but the weekend got busy and we ended up doing other things for dinner.
So, I made it tonight.
I roasted it on a bed of onions and parsnips.

And I had two plates.

But there is still a decent amount of leftovers, so I reckon we will go ahead and polish it off on Wednesday night in lieu of a crock pot meal.

Anyone have any ideas/suggestions for what I should cook for Crock Pot Wednesday next week?
If not, I'll be making Pot Roast.
